LEMON POSSET

So someone left cream behind - what to do with it ...

600 ml cream
140g caster sugar
Bring these to the boil slowly and simmer for 3 minutes.

Take off the heat and:
Add the juice and zest of two large lemons.
Whisk well.
Pour into ramekins (6)
Refridgerate 2-3 hours

Serve with shortbread and fresh fruit salad.
Or on it's own.
Very smooth and tasty.
