olive oil 1 tbsp
garlic cloves 2 crushed
olive oil 2 tsp
brown onion 1 chopped
ground cumin 1 tsp
ground coriander 1 tsp
red lentils 1/2 cup (150g) rinsed and drained
diced tomatoes 400g can
vegetable stock 3 cups (750mls)
Heat the oil and add onion, cook till soft
Add garlic and spices, cook and stir
Add lentils, tomatoes and stock
Bring to the boil
Simmer for about 20 minutes, till lentils are really soft.
